Le montblanc!
Per chi come me ha avuto la fortuna di assaggiare questo dolce direttamente da "Angelina" a Parigi, comprenderà il perchè abbia avuto l'ardita sfrontatezza di provare a farlo.
Ma che ci si può fare? In fondo quando si è amanti dei dolci e degli esperimenti, non si può non provare a fare tutte le ricette dolci assaggiate, specie quelle che ci hanno colpiti.
Il Montbanc nella nota pasticceria di Parigi viene servito monoporzione, diciamo delle dimensioni di un muffin (tra l'altro carinissimo a vedersi), e oltre alla panna e alla purea di castagne, c'è una meravigliosa meringa alla base che decisamente dà quel "je ne sais quoi" al dolce.Ebbene, essendo in vena di esperimenti, ho abbastanza improvvisato nella preparazione.
Non avendo idea su come fare la purea di castagne, mi sono ispirata alla ricetta di giallo zafferano, anche se alla fine con le porzioni ho fatto di testa mia...come sempre!
Ecco la ricetta per 5 mini Montblanc:
Ingredienti
200 ml di panna fresca
3 cucchiai di zucchero
5 marron glacé per decorare
Per la meringa francese:
1 albume medio-piccolo (circa 36 gr)
36 gr di zucchero
36 gr di zucchero al velo
Per la purea di castagne
1 manciata di castagne grandi (circa 15)
latte q.b. (circa il doppio del volume delle castagne)
100 g di zucchero
1 cucchiaio di cacao
1 bustina di vanillina
1 bicchierino di ruhm
Procedimento:
Per le meringhette. Io ho scelto la ricetta della meringa francese che non prevede la cottura dello zucchero e che ha una consistenza croccante, ma delicata e areosa come una mousse.
Si comincia a battere l'albume e, quando inizia a montare, si incorpora lo zucchero gradualmente. Una volta che il bianco è a neve ferma e lo zucchero è stato incorporato, si completa la meringa aggiungendo lo zucchero al velo con una spatola senza smontare il composto.
A questo punto con una sac-à- poche si fanno dei dischi di circa 4 cm su una placca rivestita di carta da forno.
Si infornano le meringhe a 130° in forno preriscaldato per circa 30' e poi si abbassa la temperatura a 90° e si cuoce per altri 15' tenendo il forno leggermente aperto. I tempi e le temperature sono variabili e dipendono dal vostro forno. Le meringhe devono risultare ben cotte e chiare quindi se cominciano a scurirsi, regolate di conseguenza il termostato.
Per la purea di castagne. Si elimina il guscio e si mettono in una casseruola ricoperte d'acqua. Si fanno bollire per 10', dopodiché si elimina la buccia e si puliscono per bene.
A questo punto le castagne insieme al latte, lo zucchero e l'aroma si rimettono sul fuoco a cuocere per 20' fino a che il latte si sarà ridotto e le castagne saranno ben cotte. Fate attenzione alla cottura, girando di tanto in tanto.
A fine cottura le castagne vanno passate al setaccio e ridotte in purea.
Si aggiunge il cacao e il ruhm e una volta che il composto sarà a temperatura ambiente, andrà messo in frigo a raffreddarsi ulteriormente.
Quando meringhe e purea saranno pronte, si monta la panna con lo zucchero.
Infine si può procedere alla composizione.
Si mette la meringa al centro, con lo schiacciapatate si crea una montagna di purea e infine con la sac a poche e una bocchetta a stella si decora con la panna. Il maron glacé lo si pone per decorazione, ma non è necessario.
I miei suggerimenti: le castagne più adatte sono quelle grandi, dolci e più carnose.
Si potrebbero aggiungere x decorare le meringhe avanzate, sbriciolandole sulla montagnetta di panna...:P

Le Montblanc
During my visit in Paris I had the pleasure to taste one of the best dessert of the famous patisserie "Angelina".
That's why I decided to try to make it even if emulating this recipe was like a "mission impossible".
Anyway I like chestnuts, but mostly I prefer them roasted on the fire or in some desserts, typical of my region like calzoncelli di castagne. It was just when I tried the Angelina's version of Montblanc that I became addicted to Montblanc.
In this patisserie it is served like a muffin looking-like and the presence of a french meringue at the base gives that "je ne sais quoi" to the flavour.
I did not know the recipe for making "le Montblanc" and I really did not have any idea of how to make the chestnuts' filling, but I made some search and when I was certain to know the main ingredients and the method, I started to make them, following my instinct, of course. So do not be surprised if some quantities seem to be imprecise.
I made 5 mini-montblanc.
Ingredients:
200 ml of fresh cream
about 3 tbsp of sugar
marron glacé for topping
For the french meringue
1 medium egg-white (about 36 gr)
36 gr of sugar
36 gr of icing sugar, sifted
For the chestnut filling
About 15 large chesnuts
milk (about the double volume of the chesnut)
100 g of sugar
1 tbsp of cocoa powder
1 tsp of vanilla essence
1 ruhm shot
Directions:
For the meringues. I decide to make the french meringue because it does not need cooked sugar and it has a fantastic consistency: crunchy, but at the same time soft and delicate like a mousse.
In a bowl beat the egg-white and once it starts to whip, gradually add the sugar, continuing to beat until it's firmly whipped.
Pour the icing sugar over the top and gently stir with the egg-white.
Using a sac-à-poche make some disks of about 4 cm on a sheet of baking paper and bake in preheated oven at 130°C for about 30' and finish the cooking at 90°C for 15', leaving the oven lightly open. Time and temperature depend on your oven. The meringue must be of a light color and well cooked, this means that if you notice that during baking they become dark, you need to set a lower temperature.
For the filling: Remove chesynuts' external shell and put in a casserole completely covered by water. Let boil for 10 minutes, after that peel the chesnuts and put them in the casserole again with the milk, sugar and vanilla. Let boil for 20 minutes, until the milk is completely evaporated and the chesnuts are soft enough to be mashed. During the cooking, check the chesnut and add some milk if needed.
Once they are done, mash the chestnuts and add the cocoa and ruhm.
Let cool at room temperature and then put in to the fridge.
Once the meringue and the filling are finished, whip the cream with sugar.
Put the meringue in the center of a serving plate and pour the filling over it using a potato masher e creating a sort of mountain. Complete with whipped cream and a marron glacé (if you like).
My tips: Large chestnuts are the best.
Crumble the exceeding meringues grossly and pour over the top of the white mountain...it will look like falling snow and it will be tasty, too :)

Cheescake al doppio cioccolato
Frutto di un esperimento ben riuscito, questo dolce si sposa bene in abbinamento a soggetti estremamente golosi di cioccolato. Questo perchè:
il cheesecake è fresco.
Il cheesecake è buono.
Il cheesecake è facile e veloce.
Ma soprattutto il cheesecake, questo cheesecake, è col doppio cioccolato!
Bianco e Fondente, una goduria al palato, anche per chi non adora il fondente! :)
E se questo dolce ha superato la prova "mia sorella", allora i bambini apprezzeranno senza dubbio!
Ecco per voi la mia ricetta per una tortiera a cerniera apribile da 22 cm
Ingredienti
Per la base di biscotto:
150 g di biscotti oro saiwa (o biscotti secchi)
30 g di zucchero di canna
75 g di burro
25 g di cacao
25 g di gocce di cioccolato
mezzo cucchiaino di cannella
Per il ripieno:
250 ml di panna fresca
250 g di formaggio morbido
100 g di cioccolato fondente al 45% di cacao
150 g di cioccolato bianco
1 cucchiaino di essenza di vaniglia
Procedimento
Sbirciolate i biscotti e unite cacao, cannella, zucchero e gocce di cioccolato.
Versate il burro sciolto e impastate il composto.
Foderate la teglia con carta da forno e stendete con le mani la base di biscotto uniformemente.
Sciogliete a bagnomaria il cioccolato bianco e mescolatelo di tanto in tanto.
Quanto si sarà raffreddato un po', unitelo al formaggio che avrete frullato con lo zucchero e l'aroma fino ad avere una crema.
A parte montate la panna, riservatene 3 cucchiai e unite la restante al composto di formaggio e cioccolato, mescolando dal basso verso l'alto senza farla smontare.
Mettere 6 cucchiaiate di composto da parte e versate la restante nella teglia con la base di biscotto.
Livellate la crema e fate riposare in frigo.
Mescolate i 3 cucchiai di panna e i 6 di crema messi da parte e distribuite questo composto sul precedente creando un altro strato.
Sciogliete il cioccolato fondente e versatelo a filo sul dolce in modo disordinato.
Con uno stuzzicadenti o la lama di un coltello create dei vortici, senza mescolare eccessivamente il cioccolato con la crema sottostante altrimenti si perde l'effetto "viennetta".
Ponete in frigo e fate indurire per benino...
A questo punto sformate il dolce, decorate a piacere e mangiate con gusto!

Il mio suggerimento: montate la panna a neve ferma ed evitate di farla smontare troppo quando la unite agli altri ingredienti.
Double Chocolate Cheesecake
This recipe is the result of an experiment and I can admit that it turned to be a good result!
All chocolate lovers will appreciate the presence of the chocolate expecially because it is not just one type of chocolate, but two!
It will probably make your children addicted and that's all!
Here you are the recipe for a round base of 22 cm :
Ingredients
For the biscuit base:
150 g of biscuits like digestives
30 g of demerara sugar
75 g of unsalted butter
25 g of cocoa powder
25 g of chocolate chips
half tsp of cinnamon powder
For the filling:
250 ml of fresh cream
250 gof full-fat soft cheese
100 g of dark chocolate 45% cocoa solids
150 g white chocolate
1 tsp vanilla extract
Directions
Mix the cruched biscuits with cocoa, cinnamon and sugar. Add the chocolate chips and the melted butter.
Line the base with a circle of baking sheet and press the biscuits into it.
Melt the white chocolate and let cool for some minutes.
In a bowl mix cheese, sugar and vanilla until it turn to be a soft cream and them gently stir the melted white chocolate in.
Whip the cream and put apart 3 tablespoon. Add the remaining to the cheese cream, stirring gently.
Put apart 6 tablespoon of this mixture and spoon the remainig into the tin and smooth over the top.
Chill the cake.
Mix together the whipped cream and the mixture that you previously put apart and spoon over the set mixture in the tin.
Melt the dark chocolate; then drizzle it over the top of the cake and using a skewer or the blade of a knife make some swirls paying attention to not blend the toppings too much.
Let cool in the fridge and once it is well set, turn out and decorate as you prefer.
Enjoy! ^^

Calzoncelli di castagne
Il Natale è una delle festività più coinvolgenti e caratteristiche dell'anno.
Quando si comincia ad avvertire l'atmosfera natalizia in mente vengono molte cose: il calore del fuoco del caminetto mentre fuori fa freddo; il rosso, l'oro, l'argento, il blu, colori che vedi ovunque mentre sei in giro alla ricerca dei regali; i canti e le melodie che ti accompagnano durante le passeggiate della domenica pomeriggio per i folkloristici mercatini; e poi loro, gli immancabili cenoni in famiglia, che insieme alle celebrazioni religiose, rappresentano l'essenza di questa festa.
Tuttavia spesso succede che a cause degli impegni e della vita frenetica da grandi si viva con meno intensità ed emozione la bellezza di questa festa che per molti sembra passare come un ciclone, senza lasciare niente, se non la sensazione di tristezza per qualcosa di perso.
Allora per quelli come me diventa sempre più una necessità e un piacere potersi fermare per qualche ora e godersi l'atmosfera natalizia, preparando perchè no un buon dolce tradizionale.
Proprio qualche giorno fa pensavo a qualcosa di buono che potesse accontentare la mia golosità e allo stesso tempo avere i sapori e profumi del Natale.
Essendo molto amante delle cose tradizionali, che mi ricordano la mia infanzia, ho subito pensato a un dolce tipico della zona in cui abito che ho sempre adorato e che guarda caso ha tanta, ma tanta cioccolata.
Si tratta dei calzoncelli di castagne, chiamati così perchè sono dei fagottini con un ripieno dolce, dalla forma simile ai ravioli che tipicamente vengono fritti, ma sono ugualmente buoni e "leggermente più leggeri" cotti in forno.
La ricetta, come spesso accade per quelle popolari, è abbastanze variabile a seconda delle zone e dei gusti personali, tuttavia presenta alcuni ingredienti fissi che non possono mancare.
La parte da protagonista è rivestita dal ripieno che è composto essenzialmente da castagne e cioccolata con l'aggiunta di aromi vari, dai liquori alle spezie ed eventualmente frutta secca.
La sfoglia esterna serve a contenere il tutto e a spezzare la dolcezza della cioccolata e la setosità che le castagne conferiscono all'impasto.
Ma bando alle ciance, ecco come li ho fatti io (ovviamente il ripieno può essere aromatizzato come meglio si preferisce):
Per la sfoglia:
500g di farina
100g di sugna (in mancanza usate il burro)
100g di zucchero
un pizzico di sale
vino bianco dolce e vermuth per impastare
Per il ripieno:
500 g di castgne pulite, lessate e ridotte in purea
300 g di cioccolato fondente
1 tazzina di caffè
aromi e liquori a piacere (vi consiglio di abbondare con le scorze di agrumi, specialmente il mandarino e inoltre utilizzare liquori come lo strega e il ruhm)
latte se necessario
una manciata di pinoli
Preparazione
Per la sfoglia settacciare la farina e unire il burro tagliato a pezzetti fino ad ottenere una sorta di sfarinato.
Aggiungere lo zucchero e impastare con vino bianco e vermuth per ottenere un impasto asciutto e sodo.
Per il ripieno sciogliere la cioccolata e unire tutti gli ingredienti impastando fino ad ottenere un impasto dalla consistenza morbida e cremosa.
Stendere la sfoglia sottile (circa 2 mm) e ritagliare dei cerchi con il coppapasta da farcire con poco ripieno e chiudere come dei ravioli.
Friggere in abbondante olio oppure cuocere in forno a 200° fino a che la superficie non risulta dorata.
A questo punto si possono spolverizzare con dello zucchero a velo oppure spennellare con il miele e decorare con zuccherini come ho fatto io.

Chestnut sweet ravioli
Christmas is one of the more emotional feasts during the year.
I love it and as soon as it's coming my mind goes to the warm of fireplace when outside it's cold; the characteristic colors like red, gold, silver and blue which fill the streets all around; the tipical melodies, following you during your walks through the X-mas markets...and then the X-mas Eve, spent with family and friends dining and going to masses.
Unfortunately our chaotic life doesn't allow us to live the real essence of Christmas like when we were child and always more times x-mas holidays are like a cyclone that take everything away leaving us with the feeling of something lost.
That's why many people like me try to put apart the busy life and do something for themselves for enjoying the Christmas atmosphere, making -why not- a traditional dessert.
Some days ago I was thinking about something tasty which would have been able to satisfy my greed and also my desire of X-Mas flavours.
I truly love traditional things, since they remind my childhood, so it passed no long time until I decided to make these fantastic treats, tipical of my hometown.
Like any popular recipe, the quantity and some ingredients can change from family to family, but essentially there are some fixed ingredients that cannot change.
These treats are called "Calzoncelli di castagne" and they look like ravioli because of their shape.
The filling is made of many ingredients but chestnut and chocolate are the main ones. That's why I love them! :)
Anyway I am going to illustrate how I make it, but since everyone has its own tastes and favourite flavours, it can vary. I reccomend to use many citrus zests, expecially tangerine.
For the pastry:
500g of white plain flour
100g of suet (if you don't have use butter)
100g of white sugar
a pinch of salt
white sweet wine (sparkling is better) and wermuth
For the filling:
500 g of chestnut, cleaned out, boiled and mashed
300 g of bitter chocolate
1 single espresso
flavours and liquors (citrus zests, vanilla, cinnamon, strega liquor, ruhm, and anything you like)
milk (when required)
a fistful of pin nuts
Directions
For the pastry Sift the flour and add thesalt and suet (butter), previously cut into small pieces. Mix everything using fingers until flour and butter are well mixed, then add the sugar and knead with some wine and vermouth.
Do not use water, just wine and vermouth and add inch by inch until you have a soft but not sticky dough.
Set aside.
For the filling Melt the chocolate and add to the other ingredients. If the dough is too much dry, add some milk. The consistency should be soft and creamy but not liquid.
Roll the pastry out very thinly (about 2 mm) and cut some circles using a dedicated shape. Using a teaspoon, cover each circle with few filling and close like ravioli. (Pay attention to weld well the boundary to preserve the filling)
Deep fry or bake in the oven at 200° C until the surface comes out lightly golden.
When you are finished, you can cover these treats with sifted icing sugar or some heated honey and candy like I did in the picture.

Torta pinguino
Dall'ultimo post pubblicato è passato un pò di tempo, diciamo che mi sono presa una lunga "vacanza"
anche se in realtà si è trattata di tutt'altro che una vacanza.
Divisa fra lavoro, torte, piscina e impegni vari,sono stata abbastanza indaffarata e ho lasciato un po' solo soletto il mio blog. Ciò non significa che vi abbia abbandonati, anzi!!!
Potreste pensare che per tutta l'estate non abbia osato accendere il forno, eppure, a costo di impressionanti sudate da bagno turco, io l'ho fatto anche perchè compleanni e festività varie non mi hanno dato tregua.
E dunque è stato proprio per il mio compleanno che ho fatto questa torta al cioccolato e visto che ne sono golosa non poteva che essere qualcosa del genere.
Dalle mie parti molti la chiamiamo "torta pinguino" per via dei colori e in genere è farcita con panna e nutella, tuttavia la mia versione non è quella "classica", perchè alla fin fine a me piace molto sperimetare cose diverse e poi avevo questo cioccolato al latte che mi implorava di essere trasformato in un dolce e del mascarpone che era avanzato dal tiramisu'...ecco, quindi, come viene fuori questa torta: una base al cacao farcita e decorata con crema ganache al cioccolato e crema fresca al mascarpone.
Vediamo come si fa:
Per una tortiera da 20 cm.
Ingredienti
175 g di farina
25 g di amido di mais
25 g di cacao
3 uova grandi
250 g di zucchero
60 g di latte
100 g di burro
circa mezza bustina di lievito pan degli angeli
Per la farcitura al cioccolato
250 g di Cioccolato al latte
200 g di Cioccolato fondente al 50% di cacao
300 g di panna fresca
Per la farcitura al mascarpone
250 g di Mascarpone
4 cucchiai di zucchero
100 g di panna montata
Preparazione
Mescolate le farine setacciandole insieme al lievito.
A parte montate zucchero e burro e aggiungete le uova una per volta.
Infine unite le farine alternandole al latte.
Versate tutto nella tortiera e infornate a 180°C per circa 25 minuti in forno preriscaldato.
Riscaldate la panna fresca e quando arriva al punto di bollore, versatela sul cioccolato mescolando fino a completo scioglimento. Fate raffreddare a temperatura ambiente e poi ponete in frigo per qualche ora.
Frullate lo zucchero e il mascarpone e unite la panna montata.
Quando il cioccolato è diventato cremoso, tagliate la torta in 3 strati e farcitela con cioccolato e crema al mascarpone.
A questo punto avreste terminato e sarebbe ora di gustarvi il vostro dolce...:)
Note: la mia versione di torta pinguino è bagnata con una bagna al liquore di caffè e poi è rimasta in frigo per qualche ora, visto che fredda è più buona!!! :)
Penguin cake!
Summertime is gone, but I cannot resist to the temptation of baking something even if it's warm. I made this cake for my 26th birthday and since I am in a serious love-relationship with chocolate I could not make something different than this.
In my hometown we use to call this cake "penguin" because of the colors (black and white) and the popular recipe consists of a cocoa sponge cake filled with nutella and cream. My version is a little different but even good for chocolate's lovers and people who don't like Nutella (yes, that's true. People like this exist and I also know one of them...a poor one!).
However the difference with the original recipe is in the filling: instead of cream I used a mascarpone filling and instead of Nutella I made a gorgeous chocolate ganache.
So if I tempted you quite well, try this, you will not be disappointed, choco-lovers!
For a cake tin of 20 cm of diameter.
Ingredienti
175 g plain flour
25 g cornflour
25 g cocoa powder
3 large eggs
250 g sugar
60 g milk
100 g butter
1 tsp baking powder
Choco filling
250 g milk chocolate
200 g dark chocolate 50% cocoa
300 g cream
Mascarone filling
250 g Mascarpone
4 tbsp sugar
100 g whipped cream
Preparazione
Mix and sift flours, cocoa and baking powder in a bowl.
Beat sugar and butter and add the eggs once per time.
Finally add the powders alterning with the milk.
Poor in the tin and bake for 25 minutes in preheated oven at 180°C.
Heat thee cream until it slightly boil.
Pour it on the chocolate and melt well.
Let dry at room temperature and then put in the fridge for some hours.
Beat well the mascarpone cheese and sugar, then add the whipped cream.
When the chocolate ganache is creamy, cut the cake in three slice and fill each layer with chocolate and the mascarpone filling.
This is the last step after that you only have to taste your luxurious cake...:)
Note: I desired to taste something a little bit tastier then usual, so during assembly I wet the cake with a mixture of sirup (water+sugar) and coffee liquor and then let it rest in the fridge for some hours before serving!!! :)

Un sandwich vittoriano
Quando si parla di sandwich si pensa subito al panino farcito. Due morbide fette di pane con salumi, formaggi, insalata e salse: il classico pranzo "to go" di molti che lavorano in ufficio.
Non me ne vogliano male dietologi, nutrizionisti, followers di uno stile alimentare lontano dai cibi-veleno, ma la ricetta che sto per proporvi non è da meno di un sandwich in termini di calorie, grassi e zuccheri. In fondo diciamocela tutta: si vive una volta sola, per la ciccia in più c'è la palestra e per le pene quotidiane lo zucchero regala un po' di felicità momentanea!
Gli inglesi hanno pensato bene di dare un'alternativa al sandwich salato proponendo questa versione di sandwich dolce, la ben nota Victoria Sandwich cake: una delicata torta in due strati farciti con panna e marmellata, come un sandwich insomma.
La ricetta che segue è di Mary Barry, ma l'ho modificata un po' perchè a me non piacciono le cose del tipo "metti tutto in una ciotola e sbatti per due minuti".
Inoltre non avendo marmellata, ho optato per una farcitura con crema diplomatica e devo dire che, ebbene sì, questo sandwich ha il suo perchè!
Per una teglia da 20 cm (l'autrice ha diviso l'impasto in due e cotto in due tempi, io non avendo nè troppo tempo, nè doppioni di teglie, ho fatto tutto in una volta)
Ingredienti per la torta
225g di burro
225g di farina 00 (la ricetta originale prevedeva farina autolievitante+1 cucchiaino di lievito in polvere)
225g di zucchero
4 uova grandi
una bustina di vanillina
1/2 bustina di lievito pan degli angeli (no se si fa come da ricetta originale)
Ingredienti per la farictura:
marmellata di fragole, panna/crema diplomatica o comunque qualsiasi farcia preferiate
Procedimento
Tagliare il burro in una ciotola e farlo sciogliere dolcemente al microonde.
In una ciotola unite lo zucchero e la vanillina e battere fino ad ottenere un impasto cremoso e spumoso.
Aggiungere il burro fuso versandolo a filo nel composto.
Setacciare la farina e il lievito, unedoli poco per volta con una spatola.
Versare nella teglia imburrata e infarinata e cuocere per circa 45 minuti in forno preriscaldato a 180°C.
Victoria sandwich cake
This recipe is one of my favourite because its cake is delicate and gentle and the filling can be as delicate and incisive itself like the famous queen.
In any case you can fill this spongy cake whatever you want and I opted for the diplomat cream.
This recipe is form Mary Berry's ovens, but I made some changes because I do not like too much those things like "put all ingredients in a bowl and beat for 2 minutes".
However, you will find this cake delicious as well.
For a round cake tin of 20 cm of diameters (Mary suggests to divide the mixture onto 2 cakes tins, but I preferred to bake everything in one time)
Ingredients
225g of unsalted butter
225g of plain flour (original recipe was selfraising flour+1 tsp of baking powder)
225g of caster sugar
4 large eggs
1 tsp of vanilla extract (not in the original recipe)
2 tsp of baking powder (do not use if you make original recipe)
Ingredients for filling:
strawberry jam, cream/diplomat cream or whatever filling you prefer
Directions
Let the butter gently melt in the microwave.
In a bowl beat together the eggs, sugar and vanilla until you have a creamy and fluffy mixture.
Stir the melted butter onto the mixture.
Using a spatula sdd the powders, stirring gently.
Pour the mixture in the greased tin and bae for about 45 minutes in a preheated oven at 180° C.
Yummy!

Torta ricotta e pere
Questo dolce sembra avere origini dalle parti della costiera amalfitana e, difatti, gli ingredienti che lo compongono sono tutti provenienti da quest'aera.
La torta ricotta e pera di cui sto parlando non è un dolce da forno, a parte il biscotto, e questa ricetta è davvero di una semplicità a prova di inesperto!
Personalmente non la gradisco, tuttavia mia madre si ostina a riproporla ogni volta agli ospiti per i compleanni, onomastici, ecc, perchè, a parte me, gli altri sembrano apprezzare molto.
La ricetta che propongo ce l'ha data una mia zia.
La si può preparare quando meglio si crede e poi tenere in congelatore. L'unica accortenza è che come si fa per il tiramisù, bisogna farla stare fuori dal congelatore per qualche minuto prima di servirla, perchè risulta dura.
Per una tortiera di diam.24-26 cm a cerchio apribile (importante per sformare il dolce)
Ingredienti
Per il biscotto:
250 gr di nocciole tritate
250 gr di farina
250 gr di burro
200 gr di zucchero
Per il ripieno:
250 gr di ricotta mista (vaccina+bufala)
250 ml di panna
200 gr di zucchero
3 pere medie dalla polpa compatta
Procedimento:
Per il biscotto: in un recipiente unire la farina setacciata alle nocciole.
A parte sbattere zucchero e burro e aggiungere le polveri.
Stendere per uno spessore massimo di 8 mm.
Ottenere due dischi dello stesso diametro della tortiera e cuocere a 180°C in forno preriscaldato per circa 15' o appena il biscotto diventa dorato su ambo i lati.
Per il ripieno: mondare e tagliare le pere a cubetti.
Successivamente caramellarle con poco zucchero in una padella fino a che non sono morbide.
Lasciare raffreddare.
In una ciotola sbattere la ricotta setacciata con lo zucchero e unire la panna precedentemente montata mescolando dal basso verso l'alto.
Infine aggiungere le pere scoltate.
Assemblaggio: Rivestire la tortiera con pellicola trasparente in modo da facilitare la successiva estrazione del dolce.
Mettere una delle due basi di biscotto sul fondo e ricoprire con il ripieno.
Infine chiudere con l'altro biscotto e riporre il dolce in congelatore.
Una volta congelato, sformare e spolverare con zucchero a velo.
Ricotta and pears cheescake
This cake is quite similar to an american cheesecake in fact among his ingredients there is the ricotta cheese and it has a biscuit base.
Probably the origin of this cake is from the Amalfi Coast and in fact the most of the ingrdients in it comes from the area around.
I suggest you to try it, since it is very simple to do and it has got a lot of success everytime we make it.
For a cake tin of about 24-26 cm of diameter
Ingredients
For the biscuit base:
250 gr of ground hazelnut
250 gr of plain flour
250 gr of unsweetened butter
200 gr of sugar
For the filling:
250 gr of ricotta cheese (we use half from cow and half from buffalo but you can also use the sheep's one or at least from cow)
250 ml of whipped cream
200 gr of sugar
3 medium unripe pears
Directions:
For the biscuit: in a bowl mix the sifted flour and hazelnuts.
Beat the sugar and butter and then add the powders.
Roll the dough for a maximum thickness of 8 mm.
Cut two plates of the same diameter of the tin and bake in a preheated oven at 180°C for about 15' or until the biscuit's surface gets coloured both sides.
For the filling: peel and cut the pears into small cubes.
Cook them with 1-2 tablespoons of sugar in a pan.
Let it cool.
In a bowl sift the ricotta cheese (if it's too nubby) and beat well with the sugar.
Add the whipped cream stirring gently and finally the pear without the juice released during the cooking.
Assembling: Cover the cake tin with the plastic wrap in order to easly take out the cake once it cools.
Place one biscuit on the base and then pour the filling..
Finally cover with the other biscuit and put the cake in the freezer.
When it is frozen, extract the cake from the tin and decore with icing sugar.
My tips: in order to taste well the cake, let it stay for some minutes out from the freezer before you serve it.

Il Rosso e il Nero
Il rosso e il nero sono due colori che in molti di noi scatenano sentimenti di odio/amore nel momento in cui dobbiamo colorare la pasta di zucchero.
In questo post continuo il discorso sulla colorazione, aperto in uno degli scorsi articoli.
Innanzitutto, oltre al rosso e al nero, ci sono altre tonalità -per lo più quelle scure- che creano problemi, quelle che proprio non vogliono venire e restano sbiadite, smosce e "insipide".
Nel mondo del cake design ogni giorno c'è una parte di noi che si scoraggia nel tentativo di "far prendere" i colori e si deve accontentare di qualcosa che è diverso dalle aspettative.
Allora cosa c'è di meglio di alcuni consigli su come ottenere le forti tonalità desiderate?
Ci sono diverse strade perseguibili per ottenere il colore desiderato.
Innanzitutto quella più immediata e forse più costosa è acquistare la pasta già colorata, ma quelli come me che partono dal panetto bianco fatto in casa, non possono che provare le strade alternative.
La spiegazione che do nelle prossime righe è relativa alla pasta nera, mentre per la rossa o altre tonalità scure si procede analogamente, tranne che per qualche piccola variazione.
Innanzitutto è possibile utilizzare come colorante quello in polvere ottenibile dal carbone vegetale che si può trovare facilmente in erboristeria. Come colorante permette di ottenere una buona tonalità di nero.
In alternativa è sempre possibile ottenere ottimi risultati con i coloranti in gel.
Per ottenere un nero intenso si può partire da una pasta che ha già una base di colore, per esempio il marrone o il blu, e continuare aggiungendo il nero. Se la pasta si deve utilizzare al momento, ahimè è necessario utilizzare parecchio colorante (se in gel) prima di ottenere il nero desiderato. In alternativa consiglio sempre di colorare la pasta almeno un giorno prima e lasciarla riposare. Infatti anche se al momento si ottiene nulla più di un grigio scuro o di un verde o marrone scuro (se si parte da basi già colorate), basta far riposare la pasta, che, maturando, dopo alcune ore si sarà scurita e sarà del colore desiderato.
Le prime volte sarà necessario impratichirsi per calibrare la quantità di nero da aggiungere, affinchè sia sufficiente ottenere un buon risultato dopo il tempo di maturazione.
Per il rosso si procede analogamente, con la differenza che in questo caso non è possibile partire da colori scuri, ma colori come il rosa, l'arancio, ecc. Ovviamente in base alla tonalità di rosso che si desidera ottenere, bisogna partire da una determinata base perchè il blu contenuto nel rosa-fucsia o il giallo contenuto nell'arancio influiscono sul risultato finale restituendo rispettivamente più un rosso granata e un rosso arancio.
