Panettone di mais



Il panettone di mais è un dolce tipico molisano che ho avuto la fortuna di conoscere qualche anno fa nel periodo di Natale.
Venduto solitamente in forme da plumcake o da panettone, la caratteristica principale di questo dolce è proprio la farina di mais che gli conferisce il tipico colore giallo e una texture più fitta di una classica ciambella oltre che un sapore rustico e goloso.
La ricetta che di seguito propongo mi è stata data da una mia insegnante delle elementari che è di origini molisane.
Il mio consiglio riguarda la scelta della farina. Non va bene la semola, né tantomeno una farina di mais di grossa grana tipo quella usata per la polenta, ma serve la vera è propria farina di Mais fine.

Per 2 teglie per plumcake da 18 cm di lunghezza:

Ingredienti

5 uova
250 g di farina 00
200 g di farina di mais (grana fine)
300 g di zucchero
300 g di burro
1 - bustina di lievito
1 bacca di vaniglia
100 g di gocce di cioccolato
1 bicchierino di Amaretto di Saronno.

Separare gli albumi dai tuorli e montare a neve i primi.
A parte lavorare a crema il burro con i tuorli e lo zucchero e i semi della bacca di vaniglia.
Aggiungere, mescolando dal basso verso l'alto, nell'ordine: le farine setacciate, l'amaretto, il lievito, gli albumi montati e le gocce di cioccolato.
Se l'impasto risultasse troppo duro aggiungere un poco di latte, senza tuttavia ammorbidirlo troppo.
Infornare in forno preriscaldato a 180° per 40-45 minuti. Se la teglia è alta (tipo quella di un panettone) infornare fino a un'ora.

Corn flour panettone

The cornflour panettone is a traditional cake originary from a region of the south of Italy (Molise).
I had the pleasure to taste this cake some Xmas ago and I suddenly appreciated its rustic taste and yellow color, naturally given by the corn flour.
The usual shape is loaf or panettone and the following recipe is for 2 loaf-tin, 18 cm long.
I had this recipe from my teacher of junior school who is from Molise.
My suggestion is to use the correct corn flour. I don't mean the one for polenta (cornmeal mush) which is coarse-grained, but the real fine-grained corn flour.

Ingredients
5 eggs
250 g of flour 00
250 g of corn flour
300 g of sugar
300 g of butter (soft-room temperature)
2  1/2  tsp of baking powder
1 vanilla bay
100 g of chocolate chips
1 shot of Amaretto di Saronno (liquor)


Directions:

Separate the egg whites from yolks and whip the whites until they are fluffy.
In a bowl wisk the butter with the yolks, the sugar and the vanilla seeds.
Add the remaining ingredients using a spatula and following this order: sifted flours, Amaretto, baking powder, egg whites and chocolate chips.
If the mixture is too much hard to work, add a little quantity of milk, paying attention to not soften it too much.
Bake in a preheted oven at 180° for about 40-45 minutes (depending on your oven). If you use the panettone tin, extend the baking till one hour.

Torta ricotta e pere


Questo dolce sembra avere origini dalle parti della costiera amalfitana e, difatti, gli ingredienti che lo compongono sono tutti provenienti da quest'aera.
La torta ricotta e pera di cui sto parlando non è un dolce da forno, a parte il biscotto, e questa ricetta è davvero di una semplicità a prova di inesperto!
Personalmente non la gradisco, tuttavia mia madre si ostina a riproporla ogni volta agli ospiti per i compleanni, onomastici, ecc, perchè, a parte me, gli altri sembrano apprezzare molto.
La ricetta che propongo ce l'ha data una mia zia.
La si può preparare quando meglio si crede e poi tenere in congelatore. L'unica accortenza è che come si fa per il tiramisù, bisogna farla stare fuori dal congelatore per qualche minuto prima di servirla, perchè risulta dura.

Per una tortiera di diam.24-26 cm a cerchio apribile (importante per sformare il dolce)

Ingredienti

Per il biscotto:
250 gr di nocciole tritate
250 gr di farina
250 gr di burro
200 gr di zucchero

Per il ripieno:
250 gr di ricotta mista (vaccina+bufala)
250 ml di panna
200 gr di zucchero
3 pere medie dalla polpa compatta


Procedimento:
Per il biscotto: in un recipiente unire la farina setacciata alle nocciole.
A parte sbattere zucchero e burro e aggiungere le polveri.
Stendere per uno spessore massimo di 8 mm.
Ottenere due dischi dello stesso diametro della tortiera e cuocere a 180°C in forno preriscaldato per circa 15' o appena il biscotto diventa dorato su ambo i lati.
Per il ripieno: mondare e tagliare le pere a cubetti.
Successivamente caramellarle con poco zucchero in una padella fino a che non sono morbide.
Lasciare raffreddare.
In una ciotola sbattere la ricotta setacciata con lo zucchero e unire la panna precedentemente montata mescolando dal basso verso l'alto.
Infine aggiungere le pere scoltate.
Assemblaggio: Rivestire la tortiera con pellicola trasparente in modo da facilitare la successiva estrazione del dolce.
Mettere una delle due basi di biscotto sul fondo e ricoprire con il ripieno.
Infine chiudere con l'altro biscotto e riporre il dolce in congelatore.
Una volta congelato, sformare e spolverare con zucchero a velo.


Ricotta and pears cheescake

This cake is quite similar to an american cheesecake in fact among his ingredients there is the ricotta cheese and it has a biscuit base.
Probably the origin of this cake is from the Amalfi Coast and in fact the most of the ingrdients in it comes from the area around.
I suggest you to try it, since it is very simple to do and it has got a lot of success everytime we make it.

For a cake tin of about 24-26 cm of diameter

Ingredients
For the biscuit base:
250 gr of ground hazelnut
250 gr of plain flour
250 gr of unsweetened butter
200 gr of sugar

For the filling:
250 gr of ricotta cheese (we use half from cow and half from buffalo but you can also use the sheep's one or at least from cow)
250 ml of whipped cream
200 gr of sugar
3 medium unripe pears

Directions:
For the biscuit: in a bowl mix the sifted flour and hazelnuts.
Beat the sugar and butter and then add the powders.
Roll the dough for a maximum thickness of 8 mm.
Cut two plates of the same diameter of the tin and bake in a preheated oven at 180°C for about 15' or until the biscuit's surface gets coloured both sides.
For the filling: peel and cut the pears into small cubes.
Cook them with 1-2 tablespoons of sugar in a pan.
Let it cool.
In a bowl sift the ricotta cheese (if it's too nubby) and beat well with the sugar.
Add the whipped cream stirring gently and finally the pear without the juice released during the  cooking.
Assembling: Cover the cake tin with the plastic wrap in order to easly take out the cake once it cools.
Place one biscuit on the base and then pour the filling..
Finally cover with the other biscuit and put the cake in the freezer.
When it is frozen, extract the cake from the tin and decore with icing sugar.

My tips: in order to taste well the cake, let it stay for some minutes out from the freezer before you serve it.

Ciambellone di Maurizio Santin



Il ciambellone è una delle mie preparazioni preferite in quanto amo le torte da mangiare al mattino a colazione o anche insieme a una buona tazza di the.
Questa ricetta è del noto pasticcere italiano, Maurizio Santin, ed è un successo assicurato.
Morbida e soffice, da aromatizzare a piacere.
Nel mio caso ne ho preparato mezza dose e l'ho aromatizzata con buccia di limone.
Di seguito propongo la ricetta orginale:

Per una tortiera a ciambella da 28 cm di diametro.

Ingredienti
300 gr di farina
250 gr di zucchero
4 tuorli + 4 albumi
1/2 bicchiere di latte
1 bicchiere di olio di semi
7gr di lievito chimico
un pizzico di sale
aroma a piacere

Preparazione
Sbattere i tuorli con lo zucchero il sale e l'aroma fino ad ottenere una crema bianca e spumosa.
Aggiungere l'olio e il latte mescolando.
Setacciare la farina e il lievito insieme, unendoli al composto.
A parte montare a neve gli albumi e aggiungere, utilizzando una spatola da pasticceria.
Infornate a 180àC in forno preriscaldato per 40-50'.


Breakfast cake recipe by the italian chef Maurizio Santin

This cake is very tasty and it couldn't be like that since its recipe is owned by one of the most famous pastry chef in Italy.
It is very soft and can be flavoured with any favourite flovours.
I used lemon zest and just made half quantities.
Here below find the original one:

For a doughnuts shaped tin of 28 cm of diameter

Ingredients
300 gr of plain flour
250 gr of sugar
4 yolks + 4 egg whites
1/2 glass of milk
1 glass of vegetale oil (sunflower seeds, nuts, ecc not olive oil)
7 gr of baking powder
a pinch of salt
flavour

Directions
In a bowl beat the yolks with sugar, salt and the flavor until creamy and fluffy.
Then add the oil and milk.
Sift together the flour and baking powder, stirring with the mixture.
A part whip the egg whites and finally add to the mixture gently by a confectioner spatula.
Bake for 40-50' in a preheated oven at 180°C.

Quadrotti di torta meringata



Ottimi accompagnati con il the questi quadratini di torta sono di una sofficità unica.
Ho tratto questa ricetta da un libro per dolci che ne prevedeva una versione di torta farcita con ananas.
Io non l'ho provata in questo modo, ma ho preferito una versione "nude" che poi ho tagliato in piccoli bocconi. Buoni anche con latte e caffè! ;)

Per una teglia da 26 cm:

Ingredienti
3 tuorli grossi
200g di farina
150g di zucchero
90g di burro ammorbidito
6g di lievito in polvere
1,2 dl di latte
estratto di vaniglia

Meringa
3 albumi
100g di zucchero


Preparazione
Imburrare e infarinare la tortiera.
Mescolare la farina con il lievito e un pizzico di sale.
Montare a crema il burro, lo zucchero e la vanillina e aggiungere uno per uno i tuorli.
Aggiungere le polveri, alternandole al latte.
Mettere l'impasto nella tortiera.

Per la meringa: montare a neve gli albumi con lo zucchero.

Mettere cucchiaiate di albumi sull'impasto e poi livellare.
Cuocere per circa 30 min in forno preriscaldato a 180°C o fino a quando saranno dorate e spugnose.
Raffreddare per 10 minuti e poi sformare.


Meringue cake's cubes

This cake's cubes are very good and kindly match to an afternoon tea since they are extreamly soft.
The recipe originally was a cake filled with ananas, but I tried this simpler version which I presented in little cubes...enjoy it!

For a tin of 26 cm of diameter:

Ingredients
3 large yolks
200g plain flour
150g white sugar
90g softned butter
6g baking powder
1,2 dl milk
vanilla extract

Meringue
3 egg whites
100g sugar


Directions
Grease the tin.
Mix the flour, baking powder and salt.
Beat the butter, sugar and vanilla extract until well creamy.
Add the yolks, one per time.
Stir in the powders alternating to milk.
Pour the mixture in the tin.

For the meringue: whip the egg whites with sugar until fluffy.

Pour the meringue on the mixture and gently flatten.
Bake in a preheated oven at 180°C for about 30 min or until the cake is blondy and spongy. In any cake try with a skewer.

Torta tiramisù



Annoiata dal solito tiramisù con savoiardi, mi sono imbattuta in questa ricetta e ne sono stata subito attratta.
Partendo dai tre elementi che rendono un tiramisù tale (il caffè, il mascarpone e la spugnosità dei biscotti), questa torta li combina, risultando essere davvero il tripudio di sapori che cercavo.
La ricetta è semplice e non prevede l'utilizzo delle uova crude nella crema, pertanto può essere una buona alternativa al classico tiramisù.
Vi consiglio di aumentare di un po' la bagna e di fare più farcia se intendete ricoprire tutto l'esterno del dolce.

Per una base di 24 cm di diametro:
 
Ingredienti
50 g d farina bianca
50 g di fecola
5 uova grosse (separare gli albumi dai tuorli)
180 g di zucchero al velo
1 cc d essenza di vaniglia
1 cc di succo di limone fresco

Preparazione
Mescolate le farine.
A parte montate i tuorli con la vaniglia e 150 g di zucchero fino ad ottenere una crema chiara e densa.
Montate gli albumi a neve, incorporando i restanti 30 g di zucchero e il succo di limone.
Incorporate dapprima un quarto al commposto di tuorli, unite anche la farina e per finire gli albumi rimasti., mescolando dall'alto verso il basso. Questa fase è importante, perchè per la buona riuscita del dolce, non dovete smontare troppo gli albumi.
Versate tutto nella tortiera e infornate in forno preriscaldato a 180°C per circa 35 minuti o comunque quando, infilzando uno stecchino nella torta, ne esce pulito.
Laciate raffreddare per qualche minuto e sformate il dolce sottosopra.

Per la bagna:

Ingredienti
9 dl di caffè molto forte
9 dl di liquore al caffè

Preparazione
Mescolate il caffè e il liquore

Per la crema al mascarpone:

Ingredienti
3 dl di panna
5 cucchiai di zucchero al velo
300 g di mascarpone
1 cucchiaino di essenza di vaniglia

Preparazione
Montate la panna con lo zucchero
Unite il mascarpone e l'essenza di vaniglia, mescolando con una frusta.

Per la farcitura e la guarnizione:

Ingredienti:
Le preparazioni elencate sopra
125 g di cioccolato fondente a scaglie

Tagliate la torta a tre strati.
Dividete la bagna e la crema in tre parti.
Spennellate il primo strato di torta e farcitelo con un terzo di crema, procedendo così con gli altri due strati di torta.
Per finire guarnite la superficie della torta con le scaglie di cioccolato o con la classica spolverata di cacao amaro come ho fatto io.

Il mio suggerimento: Tenete la torta in frigo per un paio d'ore prima di servire.




Tiramisù layer cake

This recipe is something different from the usual italian tiramisù which requires savoiardi biscuits.
I have looked for it for a lot of time since I desired to try it in a cake version and the result is just what I was looking for.
Mascarpone cheese combined with coffee is the characterizing element that makes the tiramisù flavours, but I ensure you that the sponge makes the rest. It is truly soft and when you wet it with the liquor and coffee it results to be fantastic. I suggest you to make a largest amount of liquids and mascarpone cream if you want to fill better and cover all the cake.
So...what you are waiting for? Bite it!

For a base of 24 cm of diameter:
 
Ingredients
50 g all-pourpose flour
50 g potato starch
5 large eggs (separete the egg whites from the yolks)
180 g icing sugar
1 tsp vanilla extract
1 tsp fresh lemon juice

Directions
Mix the powders.
Beat the yolk with the sugar and vanilla extract until creamy and fluffy.
Beat the egg white firmly adding the remaining 30 g of sugar and the lemona juice.
Mix a quarter of egg whites to the miture of yolk and sugar and then add the flours and gently fold in the remaining egg whites, trying to not unmount them to much.
Pour the mixture in a greased tin and bake at 180° C for about 35 minutes or until a skewer comes out clean.
Let it cool for few minutes and then turn upside down to finish the cooling.


For the liquids:

Ingredients
9 dl strong coffee (italian style)
9 dl coffee liquor

Directions
Stir liquor and coffee.

For the mascarpone filling:

Ingredients
3 dl cream
5 tbsp icing sugar
300 g mascarpone cheese
1 tsp vanilla etract

Directions
Beat the cream with the sugar firmly. Then add the mascarpone and the vanilla extract, beting.

Directions for the filling and garnishing:

Slice the cake in three layers.
Wet the first layer with the liquor and coffee and add the filling, doing the same with the other two layers.
If you like you can garnish the cake with chocolate chips or unsweetened cocoa powder like I did.


My tip: set in the firdge for 2 hours before serving.

Torta allo yogurt aromatizzata al limone


Molto spesso, in particolare dopo pranzo, un po' a tutti viene la voglia di dolce e ancor più spesso quella voglia è orientata verso un particolare tipo di dolce.
Allora a qualcuno come me capita che si metta alla ricerca di una nuova ricetta da sperimentare che magari possa soddisfare proprio quel desiderio.
Purtroppo nella maggior parte dei casi si rimane a bocca asciutta e il dolce che alla fine si prepara non ha la consistenza o l'aroma desiderato e bisogna accontentarsi.
In altre circostanze, invece, quando ci si ritrova semplicemente a provare una ricetta nuova, capita di ottenere proprio quello che si voleva in precedenza.
Questa ricetta che sto per proporvi è proprio una di quelle che avrei dovuto sperimentare nei miei particolari momenti da voglia di dolce!
E' soffice, delicata e umida con un leggero aroma di limone, accentuato dalla glassa -secondo me- da fare assolutamente.
E se poi si volesse aromatizzare diversamente, si potrebbe optare per la vaniglia o l'arancia e farcire con la nutella...una goduria!

In giro sul web si trovano migliaia di ricette di torte allo yogurt, plumcake, ecc, però questa non l'ho beccata su internet, ma da un libro di Mary Berry che acquistai in Inghilterra.
Inizialmente ero scettica sulla riuscita dei dolci di questo libro, eppure devo dire che, pur essendo solo la seconda ricetta che ho provato dopo una cheesecake ai frutti di bosco, mi devo ricredere!
Probabilmente presto proverò anche qualche altra golosità! :)

Ecco per voi la ricetta per una base di 24 cm:

Ingredienti
300 g di zucchero
175 g di farina
225 g di yoghurt greco
la buccia grattuggiata di 1imone (ma potete utilizzarne di più se la preferite più aromatica)
1/2 bustina di lievito pane angeli
un pizzico di sale
3 uova grandi (separare i tuorli dagli albumi)
50 g di burro ammorbidito

Preparazione
In una terrina sbattere per qualche minuto i tuorli con lo zucchero e il burro.
Aggiungere lo yoghurt e amalgamare bene.
A parte montare a neve ferma i bianchi.
Setacciare la farina e il lievito e unire al composto di tuorli e yoghurt.
Successivamente aggiungere i bianchi e mescolare dal basso verso l'alto senza far smontare eccessivamente gli albumi.
Infine versare nella teglia e infornare a 180°C per circa 50 minuti (o comunque facendo la prova stecchino).


Per la glassa (le dosi della glassa che vi riporto sono piccole e in più a consistenza era troppo dura, per cui ho raddoppiato le dosi e aggiunto un po' d'acqua e altro succo di limone, fino ad ottenere una glassa fluida ma non eccessivamente liquida)

Ingredienti
100 g di zucchero al velo
1 e 1/2 cucchiaio di succo di limone

Preparazione
Sbattere lo zucchero con il succo di limone e versare sulla torta che avrete fatto raffreddare, lasciandolo asciugare.


Yoghurt cake with lemon flavour

I took this recipe from one of Mary Barry's.
The cake is extremely soft and tasty and if you want you can make it as you prefer just changing the lemon zest with other flavours.
A little tip: use vanilla extract or vanilla seeds instead of the lemon zest and change the lemon icing with nutella or a chocolate ganache...soooooo good!


For a base of 24 cm:

Ingredients
300 g sugar
175 g plain flour (or the self-raising one)
225 g greek yoghurt
the zest of one lemon (or more if you prefer a stronger flavour)
1 and 1/2 tsp of baking powder (do not add if you use the raising flour
3 huge eggs (separate the yolks)

50 g butter, softened



Directions

In a bowl beat well the yolks, sugar and butter.
Add the yoghurt and melt.
Beat the egg whites apart.
Sift the flour (and the baking powder), adding it to the mixture of eggs and yoghurt.
Then add the egg white and gently stir with a spatula, without.
Lastly put the mixture in the tin and bake at 180 °C in preheated oven for about 50 minutes or until using a skewer comes out clean from the cake.

For Lemon Icing (I made more than the original recipe and added some water/juice lemon in order to have a fluid consistency):

100 g icing sugar, sifted
1 and 1/2 tbsp of lemon juice

Beat the sugar with the juice of the lemon and spread on the cake that you previously let cool.
Let it dry.

Torta alla mousse di cioccolato bianco con limone



Prima di provare questa ricetta, non avrei mai pensato che l'accostamento limone-cioccolato bianco fosse così buono. L'acidità del limone lega bene con la dolcezza stucchevole del cioccolato bianco.
Questo dolce l'ho provato per l'onomastico di mia madre qualche tempo fa e anche se il gusto del limone abbinato al cioccolato bianco non è una novità per quelli più esperti, per me, quando allora ho assaggiato questa torta, è stata una rivelazione!
Originariamente la ricetta, che ho tratto da un libro di dolci che mi è stato regalato da un amico, prevedeva la decorazione con i kiwi, ma, non essendo di stagione, ho preferito utilizzare delle dolcissime e succose fragole.
Questo dolce per certi aspetti somiglia a una vera e propria cheesecake da frigo ed è inoltre adatto al periodo estivo per la sua freschezza accentuata dalla presenza del limone.

Ma passiamo alla ricetta:

Per una base di 24 cm di diametro:

Ingredienti
110 g di farina bianca
60 g di burro ammorbidito
1/2 cucchiaino di lievito in polvere
75 g di zucchero semolato
1/2 cucchiaino di vanillina
2 uova grosse
sale

Preparazione
Mescolate la farina, il lievito e un pizzico di sale.
Montate a crema il burro con lo zucchero e la vanillina.
Unite le uova, amalgamandole uno per volta.
Aggiungete gradualmente il composto di farina.
Versate l'impasto nella teglia in forno preriscaldato a 180° C per circa 20 minuti o fino a che, con la prova stecchino, il dolce non si attaccherà.

Per la mousse al cioccolato bianco:

Ingredienti
180 g di cioccolato bianco grattuggiato grossolanamente
180 g di mascarpone
60 g di zucchero semolato
0,8 dl di succo di limone fresco
6 g di gelatina in fogli
3,7 dl di panna

Preparazione
Fate sciogliere il cioccolato a bagnomaria e lasciar raffreddare.
Montate a crema il mascarpone e lo zucchero e amalgamate il cioccolato fuso.
Mettete il succo di limone in una casseruola su fiamma medio-bassa e fate scaldare, aggiungete la gelatina e mescolate fino a che sarà sciolta.
Lasciate raffreddare per 30 minuti.
Amalgamate il succo di limone e l'impasto di mascarpone.
Montate la panna e amalgamatela all'impasto.
Mettete la base della torta in una tortiera a cerniera apribile da 24 cm.
Versate la mousse sul dolce e mettete in frigo per almeno 6 ore o fino a quando sarà solidificata.


Per la guarnizione al limone:

Ingredienti
1,2 dl di succo di limone
60 g di zucchero semolato
2 g di gelatina in fogli
3-4 fragole

Preparazione
Mettete il succo di limone e lo zucchero in una casseruola su fiamma bassa e mescolate fino a quando lo zucchero si sarà sciolto.
Togliete dal fuoco e aggiungete la gelatina
Mescolate fino a quando si sarà sciolta e lasciate raffreddare.
Versatela sulla mousse e tenetela in frigo finchè la guarnizione si sarà solidificata.
Decorate la superficie con le fragole tagliate a piacere appena prima di servire.


White chocolate and lemon cake

This cake is something truly special because it combines two flavours I really love: lemon and white chocolate.
Before I tried this recipe I would never say that this mix was so good and tasty. Well, my opinion is personal since I love both lemon and white chocolate, but if you want to try something different from the usual cheescake, so what are you wating for?
Bite it!


The recipe:


For the Base (a tin of 24 cm of diameter) :

Ingredients
110 g di white flour (not the raising one)
60 g di softened and unsalted butter
1/2 tsp baking powder
75 g caster sugar
1/2 tsp vanilla extract
2huge eggs
salt

Directions
Mix the flour and the baking powder.
Beat the butter with sugar, vanilla extract and a pinch of salt.
Add the eggs, one per time.
Gradually sift the flours in the mixture and melt with a spatula.
Put the mixture in the tin and then bake in the preheated oven at 180° C for about 20 minutes or until a skewer comes out clean.

For the white chocolate mousse:

Ingredients
180 g grated white chocolate
180 g mascarpone cheese
60 g di caster sugar
0,8 dl fresh lemon juice
6 g di gelatin in sheets
3,7 dl wipped cream

Directions
Melt the white chocolate in the microwave and let it cool.
Beat the cheese with the sugar and then add the white chocolate.
Put the lemon juice in a pan on low fire and let it warm, then melt the gelatin in.
Let it cool for 30 min.
Add the lemon in the mixture of cheese and sugar and stir with the cream.
Put the base of the cake that you previously baked in a tin of 24 of diameter.
Pour the mousse on the base and let it cool for 6 hours in the fridge.

For garnishing:

Ingredients
1,2 dl lemon juice
60 g caster sugar
2 g gelatin in sheets
3-4 strawberries (or your favourite fruit)

Directions
Melt the sugar and the lemon juice in a pan on low fire.
Switch the fire off and add the gelatin. Let it melt and cool.
Pour the liquid on the mousse and let it cool in the fridge.
Extract the cake from the tin and garnish with the strawberries before serving.

Chocolate mud cake con ganache al cioccolato


Se quando si tratta di torta al cioccolato pensate a una di quelle al cacao alte 10 cm, farcite con più strati di cioccolata e ricoperte con la stessa farcia cremosa, questa ricetta fa per voi.
La Mud cake è una torta goduriosa al cioccolato di origini anglosassoni che si scioglie in bocca, fondendosi perfettamente con la ganache al cioccolato.
La ricetta della base che vi propongo è tratta da un libro che acquistai tempo fa in Inghilterra.
Fra gli ingredienti prevede una quantità esorbitante di zucchero, tipico dei dolci "stra-dolci" inglesi, che ho ridotto, avendo come risultato una torta dalla dolcezza più adatta al palato italiano.
Inoltre, ho seguito un procedimento diverso da quello previsto dal testo.
Ma passiamo alla ricetta:


Per una base quadrata di 22 cm

Ingredienti:

Burro: 250 g
Cioccolato Fondente: 250 g
Caffè solubile: 8 cucchiaini
Acqua: 180 ml
Farina: 300 g
Cacao:  60 g
Bicarbonato: 1/2 cucchiaino
Zucchero: 400 g (originariamente era 550 g)
Uova: 4
Olio vegetale: 8 cucchiaini (io ho usato l'evo)
Latticello: 125 ml
Lievito: una bustina di pan degli angeli (nella ricetta non lo prevede, perchè utilizza la farina autolievitante)
 
Procedimento:

Fate sciogliere a fuoco lento parte del burro (circa 100g) con il cioccolato fondente grattuggiato, l'acqua, il latticello, l'olio e il caffè solubile.
A parte montate lo zucchero con il burro restante e un pizzico di sale.
Aggiungente le uova, incorporandole una per volta.
Setacciate le polveri insieme e unitele al composto di burro, zucchero e uova, alternandole alla parte liquida che avrete fatto raffreddare.
Versate il tutto nella teglia e infornate nel forno preriscaldato a 170°C circa per 50 minuti circa (o comunque fate affidamento alla prova stecchino).


Per la ganache:

Ingredienti:

Cioccolato fondente: 200 g
Cioccolato al latte: 200 g
Panna: 200 g

Procedimento:

Portate la panna a ebollizione e versatela sul cioccolato grattuggiato, girando fino a che non si scioglie tutto.
Fate raffreddare e, dopo qualche ora di frigo, montate la crema e utilizzatela.


Io ho preferito bagnare la base come per le torte italiane...il risultato è davvero spettacolare ;)

Chocolate Mud Cake

I took this recipe from a decorating book that I bought when I was in the UK.
I changed something in the ingredients and in the directions in order to adapt it to the italian tastes, but I ensure you that the result is extremely good.

Ingredients for a square base of 22 cm:

Butter: 250 g
Dark chocolate: 250 g
Instant coffee: 8 tsp
Water: 180 ml
Flour: 300 g (or 150g self-raising flour+ 150g plain flour)
Cocoa:  60 g
Bicarbonate of soda: 1/2 tsp
Sugar: 400 g ( the original recipe was 550g)
Eggs: 4
Vegetable oil: 8 tsp (I used the extravirgin olive oil, but you can use any seed oil if you don't like its strong flavor)
Buttermilk: 125 ml
Raising powder: 1 tsp (do not use if you use the self-raising flour)
 
Directions:

Stir on low fire about 100 g of butter with the chocolate, water, buttermilk, oil and coffee.
Beat the sugar with the remaining butter and a pinch of salt.
Add the eggs one per time and melt well.
Sift all the powders together and add it with a spatula to the mixture of eggs, butter and sugar, alterning with the liquid mixture that you previously let cool.
Pour the mixture into the greased tin and bake for about 50 minutes in the preheated oven at 170° C/315°F.



For the ganache:

Ingredients:

Dark chocolate: 200 g
Milk chocolate: 200 g
Cream: 200 g

Directions:

Heat the cream till the boiling point and stir in the grated chocolate until it is completely melted.
Let it cool and after some hour in the fridge, beat the mixture and use it.


I preferred to wet the base with a simple sugar syrup with alcool as we do with the italian classic sponge...the result is truly spectacular ;)
